Sapele cutting board you'll actually keep

Most cutting boards live one summer at the cabin and end up under a coffee mug for life. This one is the one you reach for. Sapele is dense enough to hold up against a chef's knife, soft enough not to chew the edge, and it darkens to the color of a wet trail after about a year of use. The build is half an afternoon if your jointer is already tuned and you're not trying to talk to the dog while you work.

Materials

  • Sapele board, 8/4, roughly 14 inches by 24 inches
  • Titebond III glue (waterproof rating)
  • Mineral oil, food-safe, one cup
  • Beeswax, one tablespoon, melted into the oil
  • 120 / 180 / 220 grit sandpaper
  • Two pieces of scrap pine for cauls

  • Tablesaw with a sharp rip blade
  • Jointer, six inch is fine
  • Planer, twelve inch
  • Four pipe clamps, twenty-four inch
  • Random-orbit sander
  • Block plane, sharp
  • Card scraper

Build it

Mill four straight strips

Joint one face and one edge of the rough board, then plane the opposite face flat. Rip the board into four three-inch wide strips at the tablesaw, joint the saw edge of each strip, and put them back through the planer until they're all the same thickness. Don't get clever about widths - matching is the whole point.

Dry-fit the panel

Lay the four strips edge to edge on a flat surface and shuffle them until the grain runs in a way you'll be willing to look at every morning. Mark the joints with a triangle so you can re-orient them after glue-up gets stressful. Put a straightedge across the panel - if you can see daylight under it, joint again.

Glue and clamp

Run a thin bead of Titebond III on every joint. Use the pine cauls top and bottom to keep the panel flat, alternate clamps top and bottom so the panel doesn't bow, and tighten each one only about a quarter past finger-tight. You want squeeze-out, not strangulation. Let it sit for at least four hours before you touch it again.

Flatten and shape

Scrape the squeeze-out off with a card scraper, then run the panel through the planer at a hair-thin pass per side until you get a clean reference face. Cut the panel to final length and width at the tablesaw. Hand-plane a small chamfer around every edge, top and bottom. The chamfer is what makes it feel like it costs money.

Sand it like you mean it

Random-orbit sander at 120 to flatten any planer marks, then 180, then 220. Wet the panel with a damp rag between 180 and 220 to raise the grain - this is the difference between a board that feels nice for a week and one that feels nice for ten years.

Oil and wax

Warm the mineral oil in a jar set in hot water, melt the beeswax into it, and rub the mixture in by hand. Let it sit fifteen minutes. Wipe off whatever the wood didn't take. Repeat twice over the next two days. After that, re-oil whenever it looks dry - probably four times a year if you actually use it.
